  • 4 pieces boneless, skinless chicken breasts Use fresh or thawed chicken for best results.
  • 2 tbsp olive oil
  • 1/4 cup unsalted butter Substitute with vegan margarine for a dairy-free option.
  • 2 tsp honey Can substitute with maple syrup.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika Other spices can be used for heat.
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chicken broth Use a dairy-free option for a dairy-free dish.
  • 1 tbsp chopped parsley For garnish.

Method
 

Preparation
  1. In a small mixing bowl, blend the unsalted butter, honey, garlic powder, smoked paprika, salt, and black pepper until smooth. Set aside.
  2. Heat the olive oil in a skillet over medium heat.
Cooking
  1. Add the chicken breasts to the skillet and cook for 5-6 minutes on each side until golden and reach an internal temperature of 165°F. Remove chicken from the skillet.
  2. In the same skillet, pour in the chicken broth to deglaze, scraping up any flavorful bits stuck to the bottom.
  3. Stir in the butter mixture and let it simmer until smooth.
  4. Return the chicken to the skillet, coating it well in the sauce. Allow it to simmer for an additional 2-3 minutes.
  5. Garnish with chopped parsley before serving.

Notes

Serve over rice or with mashed potatoes. Store leftovers in an airtight container in the refrigerator for 3-4 days.
