Ingredients
  

Casserole Base
  • 1 bag 32 oz frozen tater tots
  • 1 pound ground breakfast sausage Can use spicy or turkey sausage for variation.
  • 1 cup diced onion
  • 2 cups shredded cheddar cheese Can substitute with other cheese varieties.
Egg Mixture
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley or other herbs Optional for garnish.

Method
 

Preparation
  1. In a large skillet over medium heat, cook the ground breakfast sausage until browned and fully cooked. Drain any excess grease.
  2. Grease a baking dish and spread half of the frozen tater tots evenly across the bottom.
  3. Sprinkle cooked sausage evenly over the tater tots, followed by diced onions.
  4. Layer shredded cheddar cheese over the sausage and onion mix, then top with remaining tater tots.
  5. In a bowl, whisk together eggs, milk, salt, pepper, and any preferred herbs until smooth.
  6. Carefully pour the egg mixture over all the casserole layers.
  7. Preheat oven to 375°F (190°C) and bake for 40-45 minutes, until casserole is set, golden, and bubbly.
Serving
  1. Let the casserole cool for a few minutes before slicing into squares. Serve hot, optionally garnished with chopped parsley.
Storage
  1. Store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze in individual containers.

For variations, consider adding bell peppers, mushrooms, or a vegetarian option with meat alternatives or extra vegetables.
