- Grease a baking dish and spread half of the frozen tater tots evenly across the bottom.
- Sprinkle cooked sausage evenly over the tater tots, followed by diced onions.
- Layer shredded cheddar cheese over the sausage and onion mix, then top with remaining tater tots.
- In a bowl, whisk together eggs, milk, salt, pepper, and any preferred herbs until smooth.
- Carefully pour the egg mixture over all the casserole layers.
- Preheat oven to 375°F (190°C) and bake for 40-45 minutes, until casserole is set, golden, and bubbly.

- Let the casserole cool for a few minutes before slicing into squares. Serve hot, optionally garnished with chopped parsley.
