Ingredients
  

Main Ingredients
  • 2 cups fresh spinach Packed tightly
  • 1 cup feta cheese, crumbled
  • 4 large tortillas
  • 1 tablespoon olive oil For sautéing
  • to taste salt and pepper

Method
 

Preparation
  1. In a skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the spinach and sauté until it wilts, about 2 minutes.
  3. Remove from heat, then stir in the crumbled feta cheese. Season with salt and pepper to taste.
Cooking
  1. Place a tortilla in the skillet, then spread the spinach and feta mixture over half of the tortilla.
  2. Fold the tortilla in half and cook until golden brown, about 2-3 minutes on each side.
  3. Continue the process with the remaining tortillas.
  4. Enjoy your freshly made quesadillas while they’re hot!

Notes

Serve cut into wedges with optional garnishes like fresh herbs. Pair with salsa, guacamole, or sour cream for dipping. Leftovers can be stored in the refrigerator for up to 3 days or frozen for a month.
