  • 3-4 pieces boneless, skinless chicken breasts (about 1.5 lbs) Cooked chicken can be substituted with rotisserie chicken for convenience.
  • 8 oz spaghetti Cook until al dente.
  • 2 cups shredded sharp cheddar cheese Reserve half for topping.
  • 1 cup fresh bell peppers (chopped) Any color of bell peppers can be used.
  • 1 can (10.5 oz) cream of chicken soup This adds creaminess to the casserole.
Spices
  • 1 tsp paprika Provides a nice flavor boost.
  • 1/2 tsp cayenne pepper Adjust according to heat preference.
  • 1 tsp garlic powder Enhances flavor.
Garnish
  • 1/4 cup green onions (sliced) For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a large casserole dish.
  2. Cook the chicken in a large pot over medium heat for about 6-7 minutes on each side until golden and fully cooked.
  3. In a separate pot, boil salted water and cook the spaghetti until al dente, roughly 8-10 minutes. Drain and set aside.
Combining and Baking
  1. In a mixing bowl, combine the shredded chicken, cooked spaghetti, cream of chicken soup, chopped bell peppers, spices, and half of the shredded cheddar cheese. Mix until well blended.
  2. Pour the mixture into the greased casserole dish and sprinkle the remaining cheese on top.
  3. Bake for 25-30 minutes until bubbly and golden brown.
Serving
  1. Allow the casserole to rest for 5 minutes before garnishing with the chopped green onions and serving.

Notes

Serve hot garnished with sliced green onions. Pair with a green salad or garlic bread for a complete meal. Can be prepared a day in advance and stored in the refrigerator.
