- In a mixing bowl, combine the chicken pieces with minced garlic, paprika, cayenne pepper, salt, and black pepper. Let it marinate for at least 15 minutes.

- In the same skillet, sauté the chopped onion and diced red bell pepper until softened.

- Pour in the diced tomatoes and coconut milk, mixing well.
- Return the browned chicken to the skillet. Add chicken broth and bay leaf, then mix thoroughly.
- Lower the heat, cover, and simmer for 20-25 minutes.
- Adjust seasonings, remove the bay leaf, and serve over cooked rice, garnished with fresh cilantro.
