  • 1 pound protein of your choice (chicken, beef, or beans for a vegetarian option)
Vegetables
  • 2 cups fresh vegetables (carrots, potatoes, bell peppers) Chopped into bite-sized pieces
Aromatics
  • 1 medium onion Chopped
  • 2 cloves garlic Minced
  • 1 tablespoon your favorite herbs
Canned Goods
  • 1 can diced tomatoes For moisture
  • 4 cups broth Chicken or vegetable
Spices and Seasoning
  • to taste favorite spices and seasoning blends Such as cumin, chili powder, or your choice

Method
 

Preparation
  1. Chop your protein and vegetables into bite-sized pieces.
  2. Layer the denser vegetables like potatoes and carrots at the bottom of the slow cooker.
  3. Add canned goods such as diced tomatoes and broth for moisture.
  4. Sprinkle your chosen seasonings over the ingredients.
Cooking
  1. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  2. Once cooking is finished, stir everything together and serve warm.

Notes

Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months. Reheat well before serving. Enjoy with bread, salad, or topped with cheese!
