  • 1.5 lbs chicken breasts, diced into 1-inch pieces
  • 1 lb andouille sausage links, sliced into 1/2-inch pieces Can swap for milder sausage or tofu for vegetarian option.
  • 1 Tbsp Cajun seasoning
  • 1/2 onion diced into small pieces
  • 1 red bell pepper diced into large pieces
  • 1 green bell pepper diced into large pieces
  • 2 stalks celery, sliced
  • 2 tsp minced garlic
  • 1 can (14.5 oz) crushed tomatoes
  • 2 tsp dried oregano
  • 1 cup chicken broth
  • 3 cups cooked rice Add before serving.

Method
 

Preparation
  1. Start by placing the diced chicken breasts and sliced andouille sausage in the slow cooker.
  2. Add the Cajun seasoning, diced onion, red bell pepper, green bell pepper, celery, minced garlic, crushed tomatoes, dried oregano, and chicken broth.
  3. Gently stir to combine all the ingredients.
  4. Cover the slow cooker with its lid.
  5. Cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is cooked through and tender.
  6. Just before serving, stir in the cooked rice until everything is well combined.

Notes

Garnish each bowl with fresh parsley or green onions, and serve with crusty bread or salad. For added flavor, marinate chicken with Cajun seasoning beforehand. Consider adding sliced okra in the last hour of cooking.
