Preparation
- Toast the bread slices until golden and crispy.
- In a non-stick pan, heat a little olive oil over medium heat.
- Crack the eggs into the pan and cook to your desired doneness (sunny-side up, over-easy, etc.).
- While the eggs are cooking, spread ricotta cheese on each slice of toast.
- Once the eggs are done, place one egg on each toast slice.
- Season with salt and pepper to taste and garnish with fresh herbs if desired.
- Serve immediately.
Notes
Store leftovers in an airtight container in the fridge, but note that the toast may lose its crispiness.
