Main ingredients
  • 2 slices slices of bread Your favorite type of bread like sourdough or whole grain
  • 2 units eggs Cook to desired doneness
  • 1/4 cup ricotta cheese For spreading on the toast
  • to taste Salt and pepper For seasoning
  • to taste Olive oil For cooking the eggs
  • optional Fresh herbs For garnish

Method
 

Preparation
  1. Toast the bread slices until golden and crispy.
  2. In a non-stick pan, heat a little olive oil over medium heat.
  3. Crack the eggs into the pan and cook to your desired doneness (sunny-side up, over-easy, etc.).
  4. While the eggs are cooking, spread ricotta cheese on each slice of toast.
  5. Once the eggs are done, place one egg on each toast slice.
  6. Season with salt and pepper to taste and garnish with fresh herbs if desired.
  7. Serve immediately.

Notes

Store leftovers in an airtight container in the fridge, but note that the toast may lose its crispiness.
