  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1 cup chocolate chips Feel free to use dark or white chocolate chips.
  • 1 cup mini Reese's peanut butter cups, chopped Can substitute with regular Reese's cups if mini are unavailable.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the peanut butter, sugar, brown sugar, egg, vanilla extract, and baking soda. Mix until smooth and well combined.
  3. Gently fold in the chocolate chips and the chopped mini Reese's peanut butter cups.
  4. Using a teaspoon, scoop out portions of the dough and place them onto a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  6. Let the cookie bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
