- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the peanut butter, sugar, brown sugar, egg, vanilla extract, and baking soda. Mix until smooth and well combined.
- Gently fold in the chocolate chips and the chopped mini Reese's peanut butter cups.
- Using a teaspoon, scoop out portions of the dough and place them onto a baking sheet lined with parchment paper.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Let the cookie bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
