  • 2 cups cooked quinoa (or rice) Use vegetable broth for added flavor.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 piece red bell pepper, diced
  • 1 piece avocado, diced
  • 1/4 cup fresh cilantro, chopped
Dressing and Seasoning
  • 1 unit lime, juiced
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • to taste Hot sauce (optional) For a spicy kick.

Method
 

Preparation
  1. Prepare the quinoa or rice according to package instructions and allow it to cool.
  2. In a large mixing bowl, combine the cooked quinoa (or rice), black beans, corn, diced bell pepper, and avocado.
Dressing
  1. Pour in the lime juice, sprinkle cumin, and season with salt and pepper. Toss to mix everything evenly.
  2. Stir in the chopped cilantro and adjust seasoning if necessary.
Serving
  1. Serve fresh or store in the fridge for later meals.

Notes

Store in an airtight container in the refrigerator for up to 3-5 days. For optimal flavor, add a bit more lime juice before serving.
