Main ingredients
  • 4 medium medium flour tortillas
  • 1.5 cups shredded mozzarella cheese Use freshly grated for better texture.
  • 0.5 cup shredded cheddar cheese Optional
  • 0.5 cup sliced pepperoni
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon garlic powder
  • 1 tablespoon olive oil or butter For grilling
  • 0.5 cup pizza or marinara sauce For dipping

Method
 

Cooking
  1. Heat a large skillet over medium heat and add olive oil or butter to coat the bottom of the pan.
  2. Lay one tortilla flat in the skillet. On one half, sprinkle a generous amount of mozzarella and cheddar cheeses.
  3. Layer sliced pepperoni on top of the cheese, then sprinkle with oregano and garlic powder.
  4. Gently fold the tortilla in half, encasing the cheese and pepperoni.
  5. Carefully transfer the folded tortilla into the skillet. Cook for about 2-3 minutes on each side until golden brown, crispy, and cheese has melted. Press down slightly with a spatula for even browning.
  6. Continue with the remaining tortillas and ingredients. Once cooked, slice each quesadilla into wedges.
  7. Arrange the wedges on a plate and serve warm with marinara or pizza sauce for dipping.

Notes

Best served hot and fresh, can be customized with different toppings. Store leftovers in an airtight container in the refrigerator for up to 3 days.
