  • 8 oz spaghetti
  • 2 cups cooked, shredded chicken Use rotisserie chicken for quicker preparation.
  • 1 cup Monterey Jack cheese, grated Can substitute with cheddar or pepper jack.
  • 1 cup cream or cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup diced tomatoes Optional.
  • 1/2 cup chopped green onions For garnish and flavor.
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt and pepper

Method
 

Cooking Instructions
  1. Boil the spaghetti according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the shredded chicken, diced tomatoes (if using), garlic powder, and onion powder to the skillet. Cook until everything is heated through.
  4. Pour in the cream or cream of chicken soup, along with the chicken broth, stirring to combine.
  5. Add the cooked spaghetti and grated Monterey Jack cheese to the skillet. Stir until the cheese melts and the mixture becomes creamy.
  6. Add salt and pepper to taste.
  7. Before serving, sprinkle chopped green onions on top for extra flavor and presentation.

Notes

This dish stores well in the refrigerator for about 3-4 days. When reheating, add a splash of chicken broth or cream to restore its creamy texture.
