Marinate the Chicken
- In a bowl, mix the olive oil, oregano, garlic powder, salt, and pepper. Add the chicken thighs and toss to coat. Let it marinate for at least 30 minutes.
Cook the Chicken

Assemble the Gyros
- Once the chicken is cooked, slice it into strips. On each pita, spread a generous amount of tzatziki, add the chicken strips, and top with cherry tomatoes, diced cucumber, and sliced red onion.
Serve
