Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For the Gyros
  • 4 pita breads
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 medium red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Fresh parsley for garnish

Method
 

Marinate the Chicken
  1. In a bowl, mix the olive oil, oregano, garlic powder, salt, and pepper. Add the chicken thighs and toss to coat. Let it marinate for at least 30 minutes.
Cook the Chicken
  1. Heat a skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes on each side, until golden brown and the internal temperature reaches 165°F (75°C).
Make the Tzatziki Sauce
  1. While the chicken is cooking, prepare the tzatziki by combining Greek yogurt, crumbled feta, lemon juice, minced garlic, salt, and pepper in a bowl. Mix until smooth.
Assemble the Gyros
  1. Once the chicken is cooked, slice it into strips. On each pita, spread a generous amount of tzatziki, add the chicken strips, and top with cherry tomatoes, diced cucumber, and sliced red onion.
Serve
  1. Roll up the pita, and garnish with fresh parsley if desired. Enjoy your gyros!

Notes

For even more flavor, try marinating the chicken for a few hours or overnight. Use fresh vegetables for the best taste and nutrition. You can use whole wheat pita for a healthier twist.
