Ingredients
  

For the Crust
  • 1 cup unsalted butter, softened Ensure butter is at room temperature for better mixing.
  • 1 cup brown sugar
  • 1 cup quick cooking oats
  • 2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1/2 teaspoon salt Omit if using salted butter.
For the Lemon Filling
  • 1 cup granulated sugar
  • 1/4 cup lemon juice Freshly squeezed is recommended.
  • 2 large eggs
  • 1 teaspoon lemon zest Fresh zest adds vibrant flavor.
  • 1 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, cream together the softened butter and brown sugar until smooth.
  3. Mix in the quick cooking oats, flour, and salt until the mixture resembles crumbs.
  4. Press half of the mixture into the bottom of the prepared baking dish to form a crust.
Making the Lemon Filling
  1. In another bowl, whisk together the granulated sugar, lemon juice, eggs, lemon zest, and baking powder until well combined.
  2. Pour the lemon mixture over the crust in the baking dish.
  3. Crumble the remaining oat mixture on top of the lemon filling.
Baking
  1. Bake for 25-30 minutes or until the top is lightly golden.
  2. Once baked, allow to cool before cutting into squares.

Notes

Dust with powdered sugar before serving. Can be served warm or at room temperature. Store in an airtight container for up to three days at room temperature or one week in the refrigerator. Freeze for up to three months wrapped in plastic wrap.
