  • 1 large Honeycrisp apple, diced Choose a crisp apple for best texture.
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts Can be substituted with sunflower or pumpkin seeds for allergies.
  • 1/4 cup red onion, finely diced
  • 1/2 cup shredded sharp cheddar cheese Optional, use if desired.
Dressing Ingredients
  • 1/2 cup mayonnaise Can be substituted with a plant-based dressing.
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • to taste Salt and pepper Adjust based on preference.

Preparation
  1. In a large bowl, combine the chopped broccoli, diced Honeycrisp apple, dried cranberries, chopped pecans, red onion, and shredded cheddar cheese if using.
  2. In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  3. Pour the dressing over the salad ingredients in the large bowl.
  4. Toss everything together until well coated.
  5. Refrigerate for at least 30 minutes before serving.

Notes

For best flavor, let the salad marinate for an hour. Store leftovers in an airtight container, best enjoyed within 2-3 days.
