  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spatula.
  3. Stir in the minced garlic and cook for another minute, allowing the flavor to deepen.
  4. Add the sliced zucchini and bell pepper to the skillet.
  5. Cook the vegetables until they are tender, about 5-7 minutes.
  6. Pour in the soy sauce and season with salt and pepper to taste.
  7. Stir well to combine all ingredients and cook for an additional 2 minutes.
  8. Serve the stir-fry over rice for a complete meal or enjoy it on its own!

Notes

For added crunch, consider adding other vegetables like snap peas or carrots. To enhance flavors, add a teaspoon of ginger or a splash of rice vinegar. You can substitute the beef with ground turkey or chicken for variety. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
