Preparation
- Preheat your oven to 350°F (175°C). Line an 8×8-inch or 9×9-inch baking dish with parchment paper.
- In a large mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.
- In another bowl, mix together the rolled oats, baking soda, and salt. If desired, add chocolate chunks or nuts.
- Gradually add the dry mixture to the wet mixture. Stir until everything is well combined, forming a thick batter.
- Transfer the mixture to the prepared baking dish, pressing it down firmly to form an even layer.
- Bake for 20-25 minutes or until the edges are golden brown. Remove from the oven and allow to cool for 10 minutes.
- Once cooled, lift the bars from the pan using the parchment paper and let them cool completely before slicing into squares.
Notes
For a nut-free version, substitute peanut butter with sunflower seed butter. For sweeter bars, increase honey or maple syrup amount. Add dried fruits like cranberries or raisins for extra flavor.
