  • 2 pieces ripe avocados Choose ripe avocados that yield slightly when pressed for the best creamy texture.
  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup cilantro, chopped For garnish, additional cilantro can be used.
  • 1 piece lime, juiced Add lime juice right before serving to keep avocados fresh.
  • to taste salt and pepper Adjust seasonings to your liking.

Preparation
  1. In a large bowl, mash the avocados until smooth.
  2. Add the cooked chicken, cherry tomatoes, red onion, cucumber, and cilantro to the bowl.
  3. Pour in the lime juice and season with salt and pepper.
  4. Mix all the ingredients together until well combined.
  5. Serve immediately or refrigerate for later use.

Notes

This salad can be served in lettuce wraps or on a bed of mixed greens. It is best consumed within 1-2 days. For extra flavor, consider mixing in Greek yogurt or mayo.
