  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 medium avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 medium yellow onion, diced
Cooking ingredients
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 2 tbsp hot honey (store-bought or homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes on a baking sheet and roast in the oven for 40-45 minutes, stirring halfway through for even cooking.
Cooking
  1. Heat the remaining tablespoon of olive oil in a skillet over medium heat.
  2. Add the diced onion to the skillet and sauté until softened, about 3-4 minutes.
  3. Add the ground beef, sprinkle it with taco seasoning, and cook until browned and cooked through.
Assembly
  1. Layer the roasted sweet potatoes, ground beef, sliced avocado, and cottage cheese into each bowl.
  2. Finish with a generous drizzle of hot honey on top and add any garnishes you love, like chopped cilantro, red pepper flakes, or a lime wedge.

Notes

For extra flavor, marinate the ground beef in taco seasoning a few hours before cooking. Add sliced jalapeños or sriracha for more spice. Experiment with toppings like chopped nuts or seeds for added crunch.
