Ingredients
  

For the Marinade
  • 3 tbsp olive oil Extra virgin is preferred for flavor.
  • 4 cloves fresh garlic, minced
  • 2 tbsp freshly squeezed lemon juice About one lemon.
  • 2 tsp dried oregano For authentic Mediterranean flavor.
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp black pepper Freshly cracked is best.
  • 1 tsp smoked paprika Adds a nice smoky flavor.
For the Chicken
  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)

Method
 

Preparation
  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, pepper, and paprika to create the marinade.
  2. Add the chicken breasts to the marinade and ensure they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Cooking
  1. Preheat your grill to medium-high or your oven to 400°F (200°C).
  2. Grill or bake the chicken tenders for 6-7 minutes on each side until they reach an internal temperature of 165°F (75°C) and have a golden brown color.
  3. Allow the chicken to rest for 5 minutes before slicing to retain juiciness.

Notes

Serve with Greek salad, tzatziki in pita bread, or over rice. Garnish with parsley or lemon wedges. For best flavor, marinate overnight.
