  • 6 large large eggs
  • 1 cup milk (or a dairy alternative)
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1 cup chopped vegetables (bell peppers, spinach, onions, mushrooms) Feel free to experiment with your favorite veggies.
  • 1 cup diced cooked meats (ham, bacon, or sausage) Choose any cooked meat you enjoy.
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, crack the eggs and whisk them well.
  3. Add milk, salt, and pepper, and mix until completely combined.
  4. Stir in the shredded cheese, chopped vegetables, and diced meats.
  5. Grease a muffin tin with cooking spray or oil.
  6. Pour the egg mixture into the muffin tin cups, filling each about 3/4 full.
Baking
  1. Bake in the preheated oven for 18-20 minutes or until the eggs are set.
  2. Once cooked, remove from the oven and allow to cool slightly before removing them from the muffin tin.
  3. Let them cool completely before transferring to freezer-safe bags or containers.

Notes

For serving, warm them in the microwave or oven, and enjoy with a side of fresh fruit or yogurt. They can also be paired with toast or wrapped in a tortilla for a breakfast burrito. Store in an airtight freezer-safe container or bag for up to three months.
