Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, crack the eggs and whisk them well.
- Add milk, salt, and pepper, and mix until completely combined.
- Stir in the shredded cheese, chopped vegetables, and diced meats.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture into the muffin tin cups, filling each about 3/4 full.
Baking
- Bake in the preheated oven for 18-20 minutes or until the eggs are set.
- Once cooked, remove from the oven and allow to cool slightly before removing them from the muffin tin.
- Let them cool completely before transferring to freezer-safe bags or containers.
Notes
For serving, warm them in the microwave or oven, and enjoy with a side of fresh fruit or yogurt. They can also be paired with toast or wrapped in a tortilla for a breakfast burrito. Store in an airtight freezer-safe container or bag for up to three months.
