  • 2 cups cooked chicken, shredded You can use leftover chicken.
  • 1 cup broccoli florets Feel free to substitute with other vegetables.
  • 1 cup cauliflower florets Feel free to substitute with other vegetables.
  • 1 cup cream cheese, softened Allow to come to room temperature for easier mixing.
  • 1 cup shredded cheddar cheese You can swap for mozzarella or other cheeses.
  • ½ cup chicken broth Homemade broth is preferable.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, toss together the shredded chicken, broccoli, cauliflower, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Mix well until all ingredients are blended together into a creamy mixture.
  4. Transfer the chicken mixture into a greased baking dish, spreading it out evenly.
  5. Generously sprinkle the shredded cheddar cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted.
  7. Let it cool slightly before serving to allow the flavors to meld.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave. This dish also freezes well.
