  • 1 tablespoon cooking spray (or oil/butter) For greasing the muffin tin
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 bunch green onions, chopped
  • 8 large eggs
  • ¼ cup milk (any kind)
  • oz cooked bacon pieces (or chopped ham/veggie option) To customize the recipe
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt & pepper, to taste
  • 4 oz shredded cheddar (or cheese of choice) Use your favorite cheese

Preparation
  1. Preheat your oven to 375°F (190°C) and grease your muffin tin with cooking spray.
  2. In a mixing bowl, whisk together the eggs and milk, adding garlic powder, onion powder, salt, and pepper until frothy.
  3. Gently stir in the chopped peppers, green onions, bacon (or your chosen protein), and most of the cheese.
  4. Fill each muffin cup about three-quarters full with the egg mixture and sprinkle the remaining cheese on top.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until the muffins are puffy and golden.
  2. Insert a toothpick into the center; it should come out clean.
  3. Allow the muffins to cool for 5-10 minutes before removing them from the tin.

Notes

These muffins can be served warm or stored for later. Consider pairing with avocado or salsa for added flavor.
