- In a medium bowl, whisk together the eggs, salt, and pepper until well combined.
- Butter one side of each slice of bread with 1 tablespoon of butter and set them aside.
Cooking
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Once the butter has melted in the skillet, pour in the eggs, swirling the pan to ensure they reach the edges.
- Place both slices of bread, buttered side up, on top of the eggs, ensuring the edges touch.
- Cook undisturbed until the eggs are fully set and no longer runny, about 5-7 minutes.
- Carefully flip the cooked eggs along with the slices of bread.
- On one slice of bread, layer the cheddar cheese followed by the ham. Fold any excess egg over the ham.
- Close the sandwich with the other slice of bread, pressing down gently.
- Flip the sandwich to cook for an additional 2-3 minutes or until the cheese is melted and the sandwich is golden brown.
