  • 1 cup shredded mozzarella cheese

  • 1 bag frozen hash browns, thawed (about 20 oz)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (optional) Use if desired
  • 2 tablespoons green onions, chopped For garnish

Method
 

Preparation
  1. In a skillet, cook the bacon until crispy. Then, crumble it and set it aside.
  2. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, black pepper, and a sprinkle of salt if desired.
  3. Grease a 9x13-inch casserole dish.
  4. Layer the thawed hash browns in the bottom of the dish, followed by the crumbled bacon.
  5. Sprinkle the shredded cheddar and mozzarella cheeses over the top.
  6. Carefully pour the egg mixture over the layered ingredients, ensuring it soaks in and covers everything.
Baking
  1. Preheat your oven to 350°F (175°C) and bake the casserole for 40-45 minutes, or until the eggs are fully set and the top is golden brown.
  2. If the top browns too quickly, gently cover it with foil.
Serving
  1. Let the casserole sit for about 5 minutes. Garnish with chopped green onions before slicing and serving hot.

Notes

Make ahead by preparing the casserole the night before and refrigerating it. Bake in the morning.
