  • 1.5 lbs boneless, skinless chicken breasts Ensure they are fully submerged in broth.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1 package (8 oz) cream cheese, cubed and softened Add during cooking.
  • 1 tbsp minced garlic
  • 12 oz pasta (penne, rotini, or your favorite) Can use whole wheat or gluten-free pasta.
  • ½ cup heavy cream or half-and-half Adjust based on desired creaminess.
  • Optional: chopped parsley or extra Parmesan for garnish For serving.

Method
 

Preparation
  1. Place the chicken breasts in your crockpot.
  2. Sprinkle the garlic powder, onion powder, salt, and black pepper evenly over the chicken.
  3. Pour in the chicken broth, followed by the grated Parmesan cheese, cubed cream cheese, and minced garlic.
  4. Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is tender and fully cooked.
Cooking Pasta and Combining
  1. Once cooked, shred the chicken directly in the crockpot using two forks and mix it into the creamy sauce.
  2. Meanwhile, cook the pasta according to package directions, then drain and add it to the crockpot.
  3. Pour in heavy cream or half-and-half, stirring until the pasta is thoroughly coated in the sauce.
Serving
  1. Serve warm, garnished with extra Parmesan or chopped parsley.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze individual portions for up to three months. Reheat in the microwave or stovetop.
