  • 1/2 cup fresh lemon juice (not bottled)
  • 1/4 cup butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup capers Olives can be used as a substitute

  • Fresh parsley for garnish

Method
 

Preparation
  1. Place the boneless chicken breasts in the bottom of the crock pot.
  2. In a mixing bowl, combine the fresh lemon juice, butter, minced garlic, chicken broth, capers, salt, and pepper. Whisk them together until well blended.
  3. Pour this delicious mixture over the chicken, ensuring they are well coated.
  4. Cover your crock pot and choose your cooking time - cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and can be easily shredded.
  5. Once done, garnish with freshly chopped parsley and serve warm.

Notes

Storing leftovers is simple; allow to cool before transferring to an airtight container. Refrigerate for up to 4 days or freeze for up to 3 months.
