  • 4 pieces small to medium chicken breasts or 2 large, halved
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3-4 cloves garlic minced
  • 1 cup light cream or heavy cream for a dairy-free option, use coconut cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped spinach optional, can be replaced with another leafy green

Cooking Instructions
  1. Season the chicken breasts with a generous amount of salt and pepper on both sides.
  2. Heat the olive oil in a skillet over medium-high heat.
  3. Place the seasoned chicken in the skillet. Cook for about 5-6 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
  4. Lower the heat slightly and add the minced garlic to the pan, sautéing for about 30 seconds until fragrant.
  5. Pour in the cream, stirring constantly to blend it with the garlic.
  6. Add the Italian seasoning and the grated Parmesan. Stir until the sauce becomes smooth. If using spinach, fold it in and simmer for 2-3 minutes.
  7. Return the crispy chicken to the skillet, spooning the rich sauce over the top.
  8. Allow it to simmer together for an additional minute before removing from the heat.
  9. Serve hot, paired with pasta, roasted veggies, or fluffy mashed potatoes.

Notes

To store leftovers, transfer to an airtight container and refrigerate for 3-4 days. Reheat gently to maintain crispiness. For variations, consider adding sun-dried tomatoes or red pepper flakes for heat.
