Preparation
  1. In a small bowl, mix the crumbled feta cheese and breadcrumbs together.
  2. Heat the olive oil in a non-stick skillet over medium heat.
Cooking
  1. Crack the eggs into the skillet, ensuring they are spaced evenly apart.
  2. Sprinkle the feta and breadcrumb mixture on top of each egg.
  3. Cook until the eggs are set to your liking and the crust is golden brown, about 3-5 minutes.
  4. Season with salt and pepper to taste.

Notes

Best enjoyed fresh. Can be paired with sliced avocado, fresh tomatoes, toasted bread, or a green salad. For extra flavor, add spices such as paprika or oregano to the breadcrumb mixture.
