Main Ingredients
  • 8 large large eggs
  • 1 cup cottage cheese (0%-2% fat recommended)
  • ½ cup shredded cheese (cheddar or feta)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
Optional Mix-ins (up to 1 cup total)
  • 1 cup chopped fresh spinach
  • 1 cup diced bell peppers
  • 1 cup broccoli florets
  • 1 cup cooked sausage
  • 1 cup diced ham

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a silicone muffin tray for easy removal.
  2. In a blender, combine the eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
  3. Pour about ¼ cup of the egg mixture into each muffin cavity, filling them nearly to the top.
  4. Add your favorite mix-ins and a sprinkle of shredded cheese on top of each cup. Get creative!
Baking
  1. Bake for 18–22 minutes, or until the centers are just set and no longer jiggly.
  2. Allow the egg bites to cool slightly before carefully removing them from the tray.
Storage
  1. Store any leftovers in an airtight container in the fridge for up to 5 days. Simply reheat for 20–30 seconds in the microwave.
  2. For longer storage, you can freeze them for up to 2 months; remember to thaw before reheating.

Notes

Try different cheese varieties or add cooked quinoa or beans for extra protein. Be careful not to overbake to avoid dryness.
