Preparation
- Preheat your oven to 350°F (175°C) and grease a silicone muffin tray for easy removal.
- In a blender, combine the eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
- Pour about ¼ cup of the egg mixture into each muffin cavity, filling them nearly to the top.
- Add your favorite mix-ins and a sprinkle of shredded cheese on top of each cup. Get creative!
Baking
- Bake for 18–22 minutes, or until the centers are just set and no longer jiggly.
- Allow the egg bites to cool slightly before carefully removing them from the tray.
Storage
- Store any leftovers in an airtight container in the fridge for up to 5 days. Simply reheat for 20–30 seconds in the microwave.
- For longer storage, you can freeze them for up to 2 months; remember to thaw before reheating.
Notes
Try different cheese varieties or add cooked quinoa or beans for extra protein. Be careful not to overbake to avoid dryness.
