Preparation
- In a large bowl, add chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix thoroughly until well blended.
- Use a spoon to scoop about 2 tablespoons of the yogurt mixture onto a parchment paper-lined baking sheet or large plate to form clusters.
Freezing
- Place the baking sheet in the freezer and let the clusters freeze until completely solid, approximately 1-2 hours.
Chocolate Coating
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring each time, until fully melted.
- Remove the frozen yogurt clusters from the freezer. Using a spoon, carefully dip each cluster into the melted chocolate for an even coating.
- Place the coated clusters back onto the baking sheet.
Finishing Touch
- If desired, sprinkle a little sea salt on top of each cluster.
- Return the clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to solidify.
