Ingredients
  

For the cookie crust
  • 1 cup chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 8 oz cream cheese, softened Ensure it's at room temperature for a smooth mixture.
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 unit egg
  • Chocolate chips (optional for topping) Use as a garnish before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the chocolate cookie crumbs and melted butter until well mixed.
  3. Firmly press this mixture into the bottom of a greased mini muffin tin.
  4. In another bowl, beat together the softened cream cheese, sugar, vanilla extract, and egg until creamy and smooth.
  5. Pour the cream cheese mixture over the cookie crusts in the muffin tin, filling each cup evenly.
Baking
  1. Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the centers are set.
  2. Allow the cookie bites to cool in the tin before gently removing them.
  3. If desired, top with chocolate chips before serving.

Notes

These cookie bites can be served warm or at room temperature and are perfect for parties. Store them in an airtight container; they last up to three days at room temperature or a week in the fridge. Freeze for up to three months.
