Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the chocolate cookie crumbs and melted butter until well mixed.
- Firmly press this mixture into the bottom of a greased mini muffin tin.
- In another bowl, beat together the softened cream cheese, sugar, vanilla extract, and egg until creamy and smooth.
- Pour the cream cheese mixture over the cookie crusts in the muffin tin, filling each cup evenly.
Baking
- Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the centers are set.
- Allow the cookie bites to cool in the tin before gently removing them.
- If desired, top with chocolate chips before serving.
Notes
These cookie bites can be served warm or at room temperature and are perfect for parties. Store them in an airtight container; they last up to three days at room temperature or a week in the fridge. Freeze for up to three months.
