  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • ½ cup milk
  • ½ cup cooked ham or bacon, chopped (optional) Can be omitted for a vegetarian version.
  • ¼ cup green onions or chives, chopped For garnish
  • 2 tablespoons butter
  • Salt and pepper, to taste

Method
 

Preparation
  1. In a medium bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
  2. In a large skillet, melt the butter over medium heat. Add the diced potatoes and cook until they are golden brown and tender, about 15-20 minutes.
  3. If using, stir in the chopped ham or bacon, cooking for an additional 2-3 minutes until heated through.
  4. Pour the egg mixture into the skillet over the potatoes and meat. Gently stir to combine.
  5. Sprinkle the shredded cheddar cheese on top and cook until the eggs are set and the cheese is melted, about 5-7 minutes.
  6. Remove from heat and sprinkle with green onions or chives before serving.

Notes

To keep leftovers fresh, store in an airtight container in the refrigerator for about 3-4 days. Reheat before serving.
