- In a medium bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
- In a large skillet, melt the butter over medium heat. Add the diced potatoes and cook until they are golden brown and tender, about 15-20 minutes.
- If using, stir in the chopped ham or bacon, cooking for an additional 2-3 minutes until heated through.
- Pour the egg mixture into the skillet over the potatoes and meat. Gently stir to combine.
- Sprinkle the shredded cheddar cheese on top and cook until the eggs are set and the cheese is melted, about 5-7 minutes.
- Remove from heat and sprinkle with green onions or chives before serving.
Notes
To keep leftovers fresh, store in an airtight container in the refrigerator for about 3-4 days. Reheat before serving.
