Ingredients
  

For the filling
  • 2 cups cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 1 cup cheese (cheddar or your choice), shredded Feel free to experiment with different types of cheese.
  • 1 cup lettuce, chopped
  • 1/2 cup tomatoes, diced
  • 1/4 cup ranch dressing or your favorite sauce Consider trying honey mustard or chipotle sauce for a different flavor.
  • Salt and pepper to taste Don't skip on the seasoning to enhance flavor.
For wrapping
  • 4 large tortillas Use gluten-free tortillas if needed.

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, cheese, chopped lettuce, diced tomatoes, and ranch dressing. Season with salt and pepper to taste.
  2. Lay out each tortilla flat on a clean surface.
  3. Spoon a generous amount of the chicken mixture into the center of each tortilla.
  4. Fold the sides of the tortilla over the filling and roll tightly from the bottom up.
Cooking
  1. Heat a skillet over medium heat and place the wraps seam side down in the skillet.
  2. Cook for about 2-3 minutes on each side until golden brown and the cheese has melted.
  3. Remove from the skillet, slice in half, and serve warm.

Notes

Wrap leftovers in an airtight container and store in the fridge for 3-4 days. For longer storage, freeze before cooking and reheat when ready.
