Ingredients
  

Chicken Mixture
  • 3 cups Shredded chicken (cooked)
  • 1 can Creamy soup (such as cream of chicken or mushroom)
  • 1 cup Spicy salsa
  • 1 can Green chilies (diced)
Toppings
  • 2 cups Tortilla chips (crushed slightly)
  • 1/2 cup Sour cream (optional)
  • 1/2 cup Diced tomatoes (optional)
  • 1/4 cup Fresh cilantro (optional, for garnish)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the shredded chicken, creamy soup, spicy salsa, and green chilies until well combined.
  3. Spread the chicken mixture evenly in a baking dish.
  4. Crush tortilla chips slightly and sprinkle them over the top of the chicken mixture.
Baking
  1. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until heated through and the chips are slightly golden.
Serving
  1. Scoop out portions and place them on plates.
  2. Add a dollop of sour cream and garnish with diced tomatoes and fresh cilantro.

Notes

If you want a spicier kick, consider adding jalapeños to the chicken mixture. For a more cohesive texture, mix in shredded cheese with the chicken mixture before baking. To save time, use store-bought shredded rotisserie chicken.
