  • 1 lb Smoked sausage, sliced Use spicy or mild according to preference
  • 1 cup Rice White rice preferred, can use brown with longer cooking time
  • 2 each Bell peppers, diced Any color bell pepper
  • 1 tbsp Cajun seasoning Adjust according to taste for spice level
  • 1 each Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Chicken broth Can substitute with vegetable broth for a vegetarian option
  • 1 tbsp Olive oil For cooking
  • to taste Salt
  • to taste Pepper

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add sliced smoked sausage and cook until browned, about 5-7 minutes.
  3. Add chopped onion and minced garlic, sauté for 2-3 minutes until fragrant.
  4. Stir in diced bell peppers and cook until soft, about 4-5 minutes.
  5. Add rice and Cajun seasoning, stirring well to combine.
  6. Pour in chicken broth, bringing the mixture to a boil, then reduce heat to low.
  7. Cover and let it simmer until the rice is cooked through, about 20 minutes.
  8. Season with salt and pepper to taste before serving.

Notes

To store, place in an airtight container and refrigerate for up to 3-4 days. Reheat on stove or microwave, adding chicken broth if rice seems dry.
