- In a large skillet, heat olive oil over medium heat.
- Add sliced smoked sausage and cook until browned, about 5-7 minutes.

- Add rice and Cajun seasoning, stirring well to combine.
- Pour in chicken broth, bringing the mixture to a boil, then reduce heat to low.
- Cover and let it simmer until the rice is cooked through, about 20 minutes.
- Season with salt and pepper to taste before serving.
Notes
To store, place in an airtight container and refrigerate for up to 3-4 days. Reheat on stove or microwave, adding chicken broth if rice seems dry.
