  • 1 cup milk (your choice)
  • 1/4 cup melted salted butter DF option: Use ghee or melted coconut oil
  • 1/4 cup pure maple syrup plus more for serving, optional
  • 2 teaspoons pure vanilla extract
  • 1 loaf sourdough bread (10-ounce) GF option: Use gluten-free bread
  • 1 1/2 cups fresh or frozen blueberries
  • 1 tablespoon milk (your choice)
  • 1/2 teaspoon pure vanilla extract
  • 1 pinch salt
  • 1/2 cup powdered sugar

Method
 

Preparation
  1. In a large bowl, whisk together the eggs, milk, melted butter, maple syrup, and vanilla until well combined.
  2. Spray an 8×8-inch casserole dish with cooking spray. Add the bread cubes and 1 cup of blueberries, reserving 1/2 cup for later.
  3. Pour the egg mixture evenly over the bread and blueberries, tossing gently to ensure each piece is moistened. Spread the remaining ½ cup of blueberries on top.
  4. Cover the casserole and refrigerate for at least 3 hours or up to 24 hours for a make-ahead option.
Baking
  1. Preheat the oven to 350°F while the casserole warms slightly.
  2. Bake uncovered for 50-60 minutes, or until golden brown on top and set in the middle. If browning too much, tent with foil.
Making the Glaze
  1. To make the Vanilla Glaze, stir together the milk, vanilla, and salt in a small bowl. Add the powdered sugar and whisk until you have a thin glaze.
Serving
  1. Let the casserole cool for about 10 minutes, then drizzle the glaze over the top as desired and serve warm, with extra maple syrup if desired.

Notes

Use stale bread for the best texture. Customize toppings by adding nuts or other fruits like strawberries or bananas. Adjust sweetness by adding more maple syrup or modifying the glaze.
