  • 2 medium firm apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup granulated sugar
  • 0.5 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
Glaze Ingredients
  • 1 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1-2 teaspoons water (adjust for consistency)

Preparation
  1. Peel, core, and dice the apples into small pieces. Toss them with a little cinnamon and sugar and set them aside.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and granulated sugar.
  3. In another bowl, beat the egg, then add the milk and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently. Fold in the diced apples.
Baking
  1. Drop dollops of the batter onto a parchment-lined baking sheet.
  2. Bake in a preheated oven at 375°F (190°C) for 15-18 minutes, or until golden brown.
Making the Glaze
  1. Whisk together the powdered sugar, lemon juice, and water to achieve a drizzle consistency.
  2. Drizzle the glaze over the warm fritters and enjoy!
