Ingredients

For the Cake Batter
  • 2 cups all-purpose flour 250g
  • 1 cup granulated sugar 200g
  • 1/2 cup unsalted butter, softened 113g
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk 240ml
  • 1 teaspoon vanilla extract
For the Apple Filling
  • 4 medium apples, peeled, cored, and sliced
  • 1/4 cup packed brown sugar 50g
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground nutmeg
  • Powdered sugar for dusting

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a bowl, toss the sliced apples with brown sugar, vanilla extract, lemon juice, and nutmeg. Set this mixture aside.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3–5 minutes.
  4. Add the eggs one at a time to the butter mixture, mixing well after each addition.
  5. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour, mixing just until combined.
  7. Pour half of the batter into the greased baking dish and spread it evenly.
  8. Layer the apple mixture evenly over the batter.
  9. Pour the remaining batter over the apples and smooth the top.
Baking
  1. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cake cool slightly in the pan before transferring it to a wire rack to cool completely.
  3. Dust with powdered sugar before serving, if desired.

Notes

Store in an airtight container for up to three days at room temperature, or refrigerate for up to a week. Freeze wrapped tightly for up to three months. Tips: Use a mix of tart and sweet apples for more complex flavor, and consider adding chopped nuts for crunch.
